Aunt Do's Apple Cake

My Great Aunt Dorothy was my Mom's Aunt, my Grandma Pienta's sister. She was tall, thin and always ready with a hug, kiss and a "it's so good to see you". My favorite memory of Aunt Do are the summer weekends that she, along with her husband Jim and my grandparents (Mary and Stanley), would travel down to Dayton from Parma. My grandpa Stanley and Great Uncle Jim would go to Rocky's Pizza in Beavercreek for a pitcher of beer and a slice of pie and then head to the Air Force Museum. My grandma Mary and Great Aunt Do would float in our pool and then play some cards. The men would return from their afternoon out and slip into the pool also. I can still hear my Grandma yelling, "Stanley, Dorothy and I do not want to get our hair wet". Boys ... even at 70 years old they were still splashing the girls. This is Aunt Do's Apple Cake Recipe. It's moist enough, just cinnamon enough, the top gets a nice crisp crust (but not too crisp). It's delicious and so easy to make! Enjoy ...

Kitchen Equipment:
9 x 13" baking dish; lightly greased
preheated 350 degree oven


Aunt Do's Apple Cake

3 eggs, large 1 3/4 c. sugar
1 c. cooking oil (I use canola) 2 c. unsifted flour (you can use whole wheat)
1 t. baking soda 1 or 2 t. cinnamon (to your taste)
1/4 t. salt
6 tart apples (granny smith are my favorite; peeled and diced)

1. In a large bowl, blend eggs, sugar and oil.
2. Add flour, baking soda, cinnamon and salt to wet mixture, stir to combine.
3. Fold in apples
4. Pour batter into 9 x 13" baking dish and bake 50 minutes
5. Cool; sprinkle with powdered sugar, cut into squares.

** for an extra special presentation; sprinkle top of cake batter with coarse sugar mixed with ground cinnamon before baking. After baking, serve each piece of apple cake with a dallop of whipped cream and a dried apple slice ***
